Potato Flour Cake

Ingredients:

250g softened butter

1 1/4 cups sugar

5 eggs

2 cups of potato flour (280g)

1 tablespoon of baking powder

Icing

pinch of salt

1/2 cup icing sugar

1/3 cup lemon juice

Preparation

Beat the butter with sugar for about 5 minutes, add the egg yolks, one at a time, add the potato flour slowly with baking powder by hand. Beat the egg whites until they form soft peaks then add to the previous mixture carefully. Place in greased cake tin and take to a pre-heated oven (180C) for about 45m.
