
Caramel Cake with Almonds
Ingredients:
1 cup of warm milk
5 eggs
1 cup of butter
1 cup of sugar
2 cups cake flour
2 teaspoons of baking powder
200gr sugar for the caramel
1,5dl of water
Icing and filling
500gr sugar
1 cup of milk
6 tablespoons of butter
1 cup of almonds (or other nuts of preference)
In a pan, heat up the 200gr sugar with water until caramelised. Add the warm milk, until all dissolves, remove from the heat and allow to cool.
For the cake
beat together the sugar and butter then add the yolks one by one beating well as you add them. Add the flour mixed with the baking powder, the caramel and lastly the beaten egg whites folding them in carefully.
Place in a greased pan in the oven and bake for 50 minutes
For the filling:
Place sugar in a pan until it starts to caramelise, add the milk, butter and almonds. allow to boil, blend well, until it thickens enough to fill and cover the cake.
