Coconut Cake
Ingredients
3 eggs
2 cups of sugar
3 tablespoons of margarine
1/2 cup of milk
2 cups of cake flour
1 tablespoon of baking powder
10 drops of vanilla essence
1 tin of condensed milk
1 packet of shredded coconut
Method
Beat the eggyolks with the sugar and margarine
Add the milk slowly, then the flour and baking powder.
Lastly, add the vanilla essence and beaten eggwhites.
Bake at 180C and afterwards, whilst still hot, spike it with a fork and coat it with the condensed milk. Sprinkle the coconut over the whole cake.

Marie-Biscuit Fridge Cake
Ingredients:
200gr margarine
3 egg yolks
200g brown sugar
2 cups of strong coffee
300g Marie biscuits
Icing sugar to decorate or chocolate flakes
Method:
Beat the yolks with the sifted sugar to obtain a creamy consistency. Add the margarine (at room temperature) and beat well, add two tablespoons of the coffee.
Place the remaining coffee in a deep dish and rapidly dip the biscuits in the coffee, place them on a serving dish in a flower shape, then make layers with cream mixture and biscuits.
Cover the cake with the cream and decorate with chocolate flakes or any decoration of your choice.
